As a creative outlet, my daughter, Erin, works on three different blogs.
One blog is a joint effort with her beau, Caleb, and is their personal blog called Through the Fire and Rain and is basically a journal of their courtship.
Being that she’s an aspiring photographer she has a photograhy blog to showcase her work. The blog is called Blue Bird in Autumn and the name was inspired by a picture she took of a bird.
Lastly she has a fun blog where she shares her sense of style and love for unique things. The blog is called Gobbledigook.
Check them all out and look into the life and mind of my 16-year-old daughter.

Chili-{The last time I made chili I made a double batch and put half in the freezer}

Cheese quesadilla with left over chili {I’ll be making my own whole-grain tortillas using this recipe}, homemade salsa.

Homemade Pizza??? We may be out and about this coming Friday, therefore dinner may be eaten at Whole Foods.

Deer Roast, Sweet potatos {bite size chunks saute’ in butter and sprinkled with cumin seed and salt}, roasted asparagus.
Sunday
White Whole-Wheat pancakes with real maple syrup (I’m adding buckwheat and flax seed to my pancakes and to some I’ll add blueberries).
Dessert
I’m planning to make a yummy chocolate cup cakes with chocolate icing using this recipe on Saturday as a Valentine Treat for my family.

This weekend seemed to be a pretty productive. I manage to accomplish a few things in the kitchen with the help of my awesome 16-year-old daughter. Together we whipped up some pretty wholesome, made completely from scratch, yummy things such as…

Bread! My sweet daughter gather the ingredients, got the mix going and I did the kneading. Together we shaped our mini loaves (about the size of small hamburger buns) and ended up with a little over four dozen. We will use these throughout the week for toast, sandwiches, bread and butter, etc. I prefer to make a few dozen mini loaves over big ones, because I can freeze them and only thaw out what I need each day.

Buttermilk Salad Dressing! YUM! We used this recipe to make mayo and then used the ranch salad dressing recipe found here. YUMMY!
Pancakes and Sausage! What may become a Sunday evening tradition…I made buckwheat pancakes, some with blueberries and my daughter mixed some spices into ground pork and made breakfast sausage (It still needs some tweaking.)

Coasters! Because my husband kept using my granny squares I’ve been crocheting and using them for coasters, I decided I needed to make a couple just for him. I may whip some up for gifts too.

As I continue seek out natural ways to deal with my PCOS issue I’ve been studying different herbs that would be beneficial for helping to balance hormones and lower my blood sugar. With that said, I’ve concocted a herb tea to drink daily. Here are the herbs in my tea and why…
Saw Palmetto (berries) – a 5-alpha reductase inhibitor impedes testosterone conversion and reduces circulating testosterone
Vitex Agnus Castus {Chaste tree berry} (berry) – Improves menstrual regularity, supports luteal phase of menstrual cycle and addresses hyperprolactinemia.
Stinging Nettle (root) – Increases sex hormone-binding globulin.
Milk Thistle (seed) – Supports liver function (phase 1 detoxification)
Cinnamon (stick) – A recent controlled trial (1), comparing a placebo against cinnamon, demonstrated that doses of cassia cinnamomum ranging from 1-6 grams a day provided in divided daily doses all produced some significant reductions in blood sugar levels, total cholesterol levels, triglyceride levels and finally even lower levels of LDL lipoproteins.

This cookie recipe was adapted from the Tollhouse cookie recipe. And they are YUMMY!
The only thing that I recommend, that my daughter and I didn’t do with this batch of cookies is use parchment paper. These cookies tend to stick to the pan and parchment paper helps to prevent that.
Chocolate Chip Cookies
1 cup (2 sticks) butter, softened
18 packets of Truvia (equal to 3/4 cup sugar)
3/4 cup brown rice syrup
1/4 cup real maple syrup
1 teaspoon vanilla extract
2 large eggs
1 teaspoon baking soda
1 teaspoon salt
3-1/2 cups white whole-wheat flour
1-11.5 ounce bag of 60% Cacao Bittersweet Chocolate
1 cup chopped nuts (optional)
PREHEAT oven to 375° F.
COMBINE flour, baking soda and salt in small bowl. Beat butter, Truvia, rice syrup, maple syrup and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
